What is Tri-clamp Assembly? 

Tri-clamp fittings are made of 4 components – two ferrules, a gasket and a clamp.

Gasket fits in between the ferrules and the clamp sits over this assembly, locking them in this position. 

Tri-clamp is also known as Tri-clover Fittings after its popular manufacturing brand. So, tri-clover & tri-clamp fittings both mean the same.
The ferrules and clamp are generally made of stainless steel or plastic.  And gaskets from rubber or silicone.
For brewing, prefer Stainless steel since it withstands high temperatures and chemically resistant.
